Me too 21 December 2015 - 07:41 PMHubweeNot something I've had *today* per se, but it's something I've been meaning to post for a while. I consider this (appam) the de facto signature dish of Madras Woodlands Restaurant in Upper Dickson.

Absolutely delicious. But a few things to note. By default, they serve the dish exactly as depicted - two appams stacked vertically, with the coconut milk and the red sugar dispensed on the plate. Clearly, they intend one to use the coconut milk and sugar as dips.
Personally, however, I prefer to eat the appams singly, so I ask for the two to be on separate plates and then pour the milk and the sugar into the centre of each. I find this really brings out the flavour of the dish, even if it becomes a bit soggy near the end. Keep the pour localised to the centre - that's the juicy part anyway - and the periphery remains crispy.
However you decide to eat it, it's absolutely delicious, especially with coffee!�
Do they also served it with grated coconut or strictly just coconut milk ??
