I dont know how to make the nice ginger n spring onion dip [bigcry]

saw a few on YouTube, one of them I tried suit my taste. just a simple grinding on the ginger and sliced spring onion, boil the oil (mixed with the chicken oil for better taste), add salt and bit of sugar, then heat up to boiling. pour the boiling oil into ginger and onion.

Had dinner at Angus house on Friday for my dad's birthday.

    Appetizer. Prawn spring roll. Nice.
    20160212_195916.jpg

    Carrot soup. Not bad
    20160212_201904.jpg

Ribeye steak. Spoilt by my friends steak and what I ate at mortons. Not bad but sous vide cooking with a charcoal grill finish just somehow can't replace a full grilled experience
    20160212_205248.jpg

Tiramisu cake. Nice. Light. Not heavy at all.
    20160212_213742.jpg

good service especially since we came with two infants and my 3 year old girl.

My mum had the grilled cod. She liked it (my mum is really particular about fish).

Enjoyable dinner. Nice thing about Angus house, it's not as crowded as some steakhouses. Even though it was Friday night. Almost full capacity

I has been using this method for my last two chicken, tender and juicy compare the old method that I've been doing which become quite dry and tough.

you can use the soup to cook the chicken rice (add salt, ginger and garlic).

After the Water Boil ... He reduce the Fire to Medium ... How long was the Cooking Duration during Medium Fire before he Off the Fire completely? ...

I never try this method before ... I want to try ...

i just chance upon this on youtube, fast, easy and not messy. actually just off the fire once the water is boiling, and cover the pot for 30min. only apply salt and wine after the chicken is cooked and not before.

The good thing of this method is the juicy meat and will not be too tough, the bad part is it can be a bit watery.

you can then put leek, cabbage, fish maw, mushroom into the soup and get a very tasty soup.

Ntuc the whole chicken comes with head and neck.

Otherwise it comes as chicken parts - breast, thigh, wings etc or bones.

i try a headless chicken from the butcher. dunno will affect hte meat or not. after end up boiled chicken lol.

Don't need a cleaver to remove chicken neck; just disarticulate with a small knife.
Another method is to swing it over your head & pull it off.
